Description

Ingredients

  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Unsalted butter
  • Eggs
  • Whole milk
  • Vanilla extract
  • Heavy cream
  • Semisweet chocolate chips
  • Cornstarch

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time followed by milk.
  4. Combine wet ingredients with dry ingredients until just mixed. Fill each liner two-thirds full and bake for 15-20 minutes or until a toothpick comes out clean.
  5. For the custard filling, heat milk and sugar in a saucepan. Whisk egg yolks with cornstarch separately then combine with heated milk before returning to heat until thickened.
  6. Once cupcakes cool, create holes in the center of each and fill generously with custard.
  7. For the ganache, heat heavy cream until steaming then pour over chocolate chips; stir until smooth and drizzle over filled cupcakes.
