- 3 cloves fresh garlic
- 1 medium onion
- 1 cup long-grain rice
- 2 cups low-sodium chicken broth
- 4 oz cream cheese
- 1/2 cup heavy cream
- Seasonings (salt, pepper, paprika)
- 2 tbsp low-sodium soy sauce
- Dried herbs (thyme or Italian seasoning)
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a skillet over medium heat, sauté chopped onion and minced garlic in olive oil until translucent (3-5 minutes).
- Season chicken breasts with salt, pepper, and paprika; sear in the skillet until golden brown (4-5 minutes per side).
- Stir in chicken broth and soy sauce; mix in cream cheese until melted.
- Place long-grain rice into the baking dish and pour the creamy mixture over it.
- Cover with foil and bake for 30-35 minutes or until chicken reaches an internal temperature of 165°F (74°C). Let rest for 5 minutes before serving.
