Description

Twice Baked Sweet Potatoes are a comforting side dish filled with creamy goodness and topped with melty cheese, perfect for cozy dinners or festive gatherings.


Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons unsalted butter
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped
  • Salt and pepper to taste
  • 1/2 teaspoon paprika or cayenne pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Wash sweet potatoes and poke holes with a fork.
  2. Bake sweet potatoes directly on the oven rack for 45-50 minutes until tender.
  3. Cool for 10-15 minutes, then slice each potato in half and scoop out the insides into a bowl.
  4. Mix potato flesh with butter, sour cream, half of the cheese, salt, pepper, and spices until creamy.
  5. Spoon mixture back into potato skins, top with remaining cheese, and bake at 350°F (175°C) for another 15-20 minutes until golden brown.
