  • 3 cloves fresh garlic
  • 1 tablespoon fresh ginger
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 1 bell pepper (any color)
  • 1 sweet onion
  • 2 green onions
  • 1 tablespoon cornstarch

Instructions

  1. Prepare ingredients by chopping chicken into bite-sized pieces and mincing garlic and ginger.
  2. Marinate the chicken in a bowl with soy sauce, minced garlic, ginger, and cornstarch for at least 15 minutes.
  3. Heat vegetable oil in a skillet over medium-high heat; sauté sliced onions and bell peppers until tender.
  4. Add marinated chicken to the skillet; cook until golden brown on all sides (about 5-7 minutes).
  5. Sprinkle freshly ground black pepper over the chicken and stir well.
  6. Pour in the remaining marinade; cook until bubbly and chicken reaches an internal temperature of 165°F.
  7. Serve hot over rice or noodles, garnished with chopped green onions.
