Ingredients

- Active dry yeast
- Warm water

- Baking soda

Instructions
- 1. In a bowl, mix flour and salt. In another bowl, combine warm water, sugar, and yeast; let it froth for 5 minutes. Gradually combine both mixtures to form a dough.
- 2. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
- 3. Place the dough in an oiled bowl covered with a damp cloth; let it rise in a warm area for about 1 hour or until doubled in size.
- 4. Punch down the risen dough, divide into golf ball-sized portions, flatten them, and add shredded cheese.
- 5. Shape each portion into a pretzel by twisting the ends together. Boil water with baking soda; drop each pretzel in for 30 seconds before placing on parchment-lined trays.
- 6. Preheat oven to 425°F (220°C). Brush boiled pretzels with melted butter and sprinkle with salt. Bake for 12-15 minutes until golden brown.
