- 3–4 boneless skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 1 cup seasoned breadcrumbs (panko recommended)
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat chicken breasts dry and season with salt and pepper. Dip each breast in beaten eggs until fully coated.
- In a separate bowl, mix breadcrumbs, garlic powder, paprika, and half of the Parmesan cheese.
- Roll each egg-coated chicken breast in the breadcrumb mixture until evenly covered.
- Place breaded chicken on the baking sheet and sprinkle remaining Parmesan on top.
- Lightly spray with olive oil and bake for 25-30 minutes until golden brown and cooked through (internal temperature should reach 165°F/75°C).
- Let rest for five minutes before serving.
